Ingredients
4 cups fresh spinach (locally sourced from Huerta Los Tamarindos or Mercado Organico San Jose when in season)
1 cup fresh pomegranate seeds (available in season at Baja Farm Fresh or La Comer Zona Hotelera)
1/4 cup walnuts or almonds, toasted (can be found at Agricole)
1/4 cup crumbled feta cheese (optional, sourced from California Ranch Market)
2 tbsp extra virgin organic olive oil
1 tbsp fresh lemon juice (from Baja-grown lemons)
1 tsp honey or agave syrup (optional for sweetness)
Sea salt and freshly ground black pepper to taste
Instructions:
Prepare the spinach: Wash and dry the spinach, then place it in a large salad bowl.
Add the pomegranate seeds: Sprinkle the fresh pomegranate seeds over the spinach, adding a burst of color and flavor.
