Ingredients
2 salmon fillets (sourced from California Ranch Market or local fish markets)
2 cups fresh spinach (available at Huerta Los Tamarindos or Mercado Organico San Jose)
1 medium sweet potato, cubed
1 medium purple potato, cubed
1 cup Brussels sprouts, halved
2 tbsp mixed seeds (pumpkin, sunflower, or chia, found at California Ranch Market)
1 tbsp olive oil (locally sourced if available)
Sea salt and freshly ground black pepper to taste
For the dressing:
1/4 cup plain Greek yogurt (or plant-based yogurt)
1 tbsp tahini
1 tbsp fresh lemon juice (from Baja-grown lemons)
1 garlic clove, minced
Water to thin the dressing, as needed

Instructions:
Roast the veggies: Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes, purple potatoes, and Brussels sprouts in olive oil, sea salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until golden and tender, flipping halfway through.
Cook the salmon: While the veggies are roasting, season the salmon fillets with salt and pepper. Heat a little olive oil in a pan over medium heat and cook the salmon for 3-4 minutes on each side, until fully cooked and slightly crispy on the edges.
Prepare the dressing: In a small bowl, whisk together the Greek yogurt, tahini, lemon juice, minced garlic, salt, and pepper. Add a bit of water to thin it out if necessary, making sure it’s smooth and creamy.
Assemble the power bowl: In two bowls, start with a base of fresh spinach. Top with roasted sweet potato, purple potato, Brussels sprouts, and a sprinkle of mixed seeds. Add the cooked salmon fillet on top.
