Pea and goat cheese crostini

Voilá! Here’s a delicious recipe for Homemade Pea and Goat Cheese Crostini, curated by Sam, perfect for a light bite or a mindful snack.

Using fresh, local ingredients available in Los Cabos, this recipe combines the sweetness of peas with the tangy richness of goat cheese, all on top of a crispy crostini. It’s a simple yet elegant dish that’s easy to prepare and packed with flavor and nutrients.

Ingredients

  • 1 French baguette or sourdough bread (sliced into 1/2-inch thick pieces - my favorite is from California Ranch Market!)

  • 1 cup fresh or frozen peas

  • 1/2 cup goat cheese (locally sourced from California Ranch Market)

  • 1 tbsp organic olive oil

  • 1 tbsp fresh lemon juice from Baja-grown lemons

  • 1 garlic clove, minced

  • Salt and pepper to taste

  • Fresh mint leaves for garnish (optional)


Instructions:

  1. Prepare the crostini: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet, drizzle with olive oil, and toast in the oven for 8-10 minutes, or until golden and crispy. Set aside.

  2. Make the pea mixture: Bring a pot of water to a boil, and blanch the peas for 2-3 minutes, or until tender. Drain and transfer the peas to a bowl of ice water to stop the cooking process. Drain again.

  3. Blend the peas: In a food processor, combine the blanched peas, garlic, lemon juice, a pinch of salt, and pepper. Pulse until the peas are lightly mashed but still have texture (you don’t want a smooth puree). Set aside.

  4. Spread the goat cheese: Once the crostini are cool, spread a layer of goat cheese on each toasted baguette slice.

  5. Top with pea mixture: Spoon the mashed pea mixture over the goat cheese. Garnish with fresh mint leaves for a burst of flavor and a beautiful presentation, if desired.

  6. Serve: Drizzle with a little extra olive oil and a sprinkle of salt and pepper. Serve immediately and enjoy!
