Pea and goat cheese crostini
Voilá! Here’s a delicious recipe for Homemade Pea and Goat Cheese Crostini, curated by Sam, perfect for a light bite or a mindful snack.
Using fresh, local ingredients available in Los Cabos, this recipe combines the sweetness of peas with the tangy richness of goat cheese, all on top of a crispy crostini. It’s a simple yet elegant dish that’s easy to prepare and packed with flavor and nutrients.
Why It’s Good For You:
Peas are a great source of plant-based protein and fiber, which help with digestion and keeping you full. They’re also rich in vitamins C and K, supporting immunity and bone health.
Goat Cheese is easier to digest than cow’s milk cheese and provides calcium, healthy fats, and probiotics, which are great for gut health.
Olive Oil provides healthy fats that support heart health, while lemon juice adds a bright, refreshing flavor and provides vitamin C for immune support.
Mint adds a refreshing touch and is known for aiding digestion and soothing the stomach.
Ingredients
1 French baguette or sourdough bread (sliced into 1/2-inch thick pieces - my favorite is from California Ranch Market!)
1 cup fresh or frozen peas
1/2 cup goat cheese (locally sourced from California Ranch Market)
1 tbsp organic olive oil
1 tbsp fresh lemon juice from Baja-grown lemons
1 garlic clove, minced
Salt and pepper to taste
Fresh mint leaves for garnish (optional)
Instructions:
Prepare the crostini: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet, drizzle with olive oil, and toast in the oven for 8-10 minutes, or until golden and crispy. Set aside.
Make the pea mixture: Bring a pot of water to a boil, and blanch the peas for 2-3 minutes, or until tender. Drain and transfer the peas to a bowl of ice water to stop the cooking process. Drain again.
Blend the peas: In a food processor, combine the blanched peas, garlic, lemon juice, a pinch of salt, and pepper. Pulse until the peas are lightly mashed but still have texture (you don’t want a smooth puree). Set aside.
Spread the goat cheese: Once the crostini are cool, spread a layer of goat cheese on each toasted baguette slice.
Top with pea mixture: Spoon the mashed pea mixture over the goat cheese. Garnish with fresh mint leaves for a burst of flavor and a beautiful presentation, if desired.
Serve: Drizzle with a little extra olive oil and a sprinkle of salt and pepper. Serve immediately and enjoy!
